Quail Scotch Eggs with Micro Green Salad
- For eggs:
- 1.Boil the eggs in water at medium heat for 3 minutes and peel off the shell
- 2.Let them cool down.
- For coating:
- 1.Wash and rinse the lentil 4 times.
- 2.Add the lentils, butter, salt, pepper and water and cook them in a pan with the lid on.
- 3.When lentils are cooked remove the lid and dry out the water.
- 4.Keep stirring until all the water has been evaporated.
- 5.Blitz the lentil mixture for a smooth puree.
- 6.Cool the thick puree out and coat it around the eggs.
- 7.Coat them further in flour, egg and bread crumb.
- To cook the eggs:
- 1.Deep fry at 180 degrees until golden brown.
- For micro green salad:
- 1.Toss the micro greens with salt, pepper and olive oil.
Eggs in Purgatory | Italian Style

Ingredients
- 2 teaspoons extra-virgin olive oil
- 1 small red onion — diced (about 1 cup)
- 3 cloves garlic — minced (about 1 tablespoon)
- 1 can reduced-sodium chickpeas — (15 ounces), rinsed and drained
- 1 jar good-quality tomato pasta sauce — (24 ounces)
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/4 teaspoon red pepper flakes
- 5 ounces baby spinach
- 4 large Phil’s Fresh Eggs
- 1/2 cup freshly grated Parmesan cheese
- Chopped fresh basil
- Baguette slices — for serving
Instructions

Place a rack in the center of your oven and preheat the oven to 375 degrees F.

Heat the olive oil in a large, ovenproof, nonstick skillet over medium-high. Add the onion and cook, stirring often, until the onion is translucent, about 3 minutes. Add the garlic and cook just until fragrant, about 30 seconds. Stir in the chickpeas, tomato sauce, oregano, salt, and red pepper flakes. Bring to a simmer and let cook until slightly thickened, about 3 minutes. Stir in the spinach a few handfuls at a time, letting it wilt. With the back of a spoon, make 4 indentations in the sauce. Crack one egg inside of each, then sprinkle the Parmesan cheese over the whole dish.

Carefully transfer the pan to the oven. Bake until the egg whites are set but the yolks are still soft, 10 to 12 minutes. Remove from the oven and sprinkle with fresh basil. Serve hot with baguette slices.
Recipe Notes
- Eggs in Purgatory are best enjoyed right away. You could refrigerate extra tomato and chickpea sauce for up to 3 days, then rewarm it and serve it with a freshly cooked egg.

Egg in a Blanket Recipe
- 1.Using a heart-shaped cookie cutter, cut out the centre of each of the bread slices.
- 2.Heat 1 Tbsp butter in a pan and place one bread slice on it. Keep the flame on low, and let it brown. Then flip it on the other side.
- 3.Slowly break an egg into the heart-shaped cavity. Cover the pan with a lid, and let it cook for 3-4 minutes. Check if the egg has cooked as per your liking.
- 4.Slide it onto a plate and repeat the process with the other bread slice.
- 5.Season with salt, chilli flakes and oregano. Serve hot.

- Whisk 2 large eggs in a small bowl; season with kosher salt and freshly ground black pepper and set aside. Heat 1 teaspoon olive oil in a medium nonstick skillet over medium heat. Add 3 cups baby spinach and cook, tossing, until wilted, about 1 minute. Add eggs; cook, stirring occasionally, until just set, about 1 minute. Stir in 1-2 tablespoons grated Parmesan. Sprinkle with crushed red pepper flakes.

- 2.In a mixing bowl, add the yolks, mayonnaise and mustard sauce and mix well. Add salt and pepper accordingly to your taste.
- 3.Take a piping bag fit with a nozzle, and fill in up with the egg mixture.
- 4.Carefully fill up the egg whites with the egg mixture, making neat swirls. Serve immediately.
Picnic Eggs Recipe
- 1.Separate the egg whites and yolks in the boiled eggs.
- 2.Mash the boiled egg yolks.
- 3.Mix the ham and onions together and add in the chilli, cheese and egg yolks.
- 4.Season. Mix it until it becomes malleable.
- 5.Roll into balls and stuff it into the boiled egg whites.
- 6.Join the two halves of the egg together.
- 7.Dip this into the beaten egg and then into the semolina, then deep fry.
